背景:升糖指数(GI)是近年来非常流行的健康概念,人们已经逐渐习惯用它来把食物分为三六九等。升糖指数的原理非常简单:基于食物摄入后影响血糖的水平来给它们打分,高于70的为高升糖食物,而低于55的为低升糖食物。然而,最近的一份研究显示,每个人代谢食物的方式都不同,同样的白面包,63位受试者摄入后测出的升糖指数从35到103不等,即白面包可以既是低升糖又是高升糖,得看是谁吃的。另外,对于同一人来说,在测试之前的饮食习惯,以及摄入当时的食物搭配也会影响升糖的结果。专家表示,GI有一定的参考价值,但只是食物的一个属性,我们在选择食物时不能盲从,还需根据自身条件综合判断。
